The Magento Lock Catalog extension allow you to lock categories and products that you don’t want the 3rd party or the moderator to modify it without your notice.
You can lock a category or a category and it sub-categories easy by clicking the Lock/Lock & All Sub. So the category cannot be modified, delete or move unless you unlock the category.
You can lock a product or a list of product in Lock Catalog Manager. So nobody can modify or delete it.
